Fish feast

Went to the market this morning hoping to get some more flathead for dinner but they only had a frozen pack so I got that to put aside for Good Friday.
So for tonight’s dinner we had pink snapper in crispy batter and boy was it delicious.
At $25 for 500g it’s not the cheapest fish but compare that to getting good local fish at an upmarket fish and chip shop and it seems a bargain.
I have a peculiar love-hate thing with fish; love it but sometimes feel violently ill if I cook it myself, so I did all the prep and the husband did the frying.
